Not every sourdough needs a shattering crust. This is the loaf we bake for the week — soft, square-cornered, and perfect for a proper piece of toast.

The seed soaker is the secret. Toasted seeds hydrated overnight melt into the crumb and keep the loaf tender for four or five days on the counter.
