Sticky dough is the single most common frustration for new sourdough bakers. It sticks to your hands, your bench, your banneton — and it can make you doubt the whole enterprise.
The good news is that sticky dough is almost always a symptom, not a mystery. Once you learn to read what your dough is telling you, the fix is usually a small adjustment to hydration, timing, or technique.
