Focaccia is the most forgiving sourdough bake in our rotation. The dough is wet, the shaping is minimal, and the pan does most of the work.
We use a generous glug of good olive oil in the pan — enough that the bottom almost fries as it bakes — and finish with flaky salt and fresh rosemary just out of the oven.
