This is the loaf that made our kids sourdough converts. It's a lightly enriched dough — a little milk, a little butter — rolled around a thick cinnamon sugar paste.

Toasted with butter, it's the best thing we can imagine on a Saturday morning.

Almost always under-proofed dough or a filling that's too dry. Let the shaped loaf proof until visibly puffy and use a spreadable, slightly wet paste.
